Easter Carrot Cake

Hello my dears,

I would like to introduce my favorite carrot cake to you today just in time for Easter. This carrot cake with apple sauce and oatmeal is not only juicy and super tasty, but also a healthier option for our little ones. I hope you will like it too!

What you need:
- 300 g whole wheat flour
- 150g brown sugar
- 100 g oatmeal
- 150g ground walnuts
- 120ml melted coconut oil
- 120g unsweetened applesauce
- ¼ tsp nutmeg
- ¼ tsp ginger powder
- 2 tsp cinnamon
- 1 tsp natural vanilla extract
- 2 teaspoons of baking soda
- 4 carrots, grated (approx.400g)
- 250 ml of oat or soy milk

For the topping (optional):
- 400g cream cheese
- 3-4 tbsp whipped cream
- ½ tsp organic lemon zest, grated
- 150g powdered sugar
- 50g pistachios, chopped

1.) Preheat the oven to 180 degrees.
2.) Put all ingredients in a bowl and mix well with a wooden spoon.
3.) Grease a baking pan and fill in the dough. Bake the cake for about 40 minutes and then let it cool completely.
4.) Spread the cream cheese and cream smoothly. Add the grated lemon peel and powdered sugar and whip until creamy.
5.) Finally, brush the cake with the topping and sprinkle with chopped pistachios.
